Beef Ularthiyathu / Beef - Kerala style Preparation


A very Popular Beef dish.....its the one mandatory dish served during a Christian wedding in any part of Kerala. 


For marinating 

Beef - 1 kg 
Ginger and Garlic crushed - 3 table spoon each 
Green Chili's - 1 to 2 no's slit 
Vinegar - 3 table spoon 
Salt - to taste 
Turmeric Powder - 1 tsp
Pepper Powder - 1 tsp
Curry Leaves - 1 to 2 spring 
Coconut oil or Olive oil - 1 table spoon 
Coriander powder - 1 table spoon (optional , do not use if you plan to refrigerate the beef) 
Salt to taste

Meat Masala Powder - 1 table spoon 


Other Ingredients 

Coconut oil - 3 table spoon
Onion - 2 medium
Ginger - 2 inch size piece crushed 
Garlic - 5 to 6 cloves 
Curry Leaves - 1 to 2 spring 
Coconut - 1/4 cup cut in to thin slice pieces (Optional) 
Coriander Powder - 2 table spoon 
Red Chili Powder - 1 table spoon (as per your tolerance level)
Turmeric Powder - 1/4 tsp 
Meat Masala powder - 1/2 tsp (Optional) 
Fenugreek Powder - 1/4 tsp (Optional) 

Method 

* Marinate the Beef pieces with the ingredients under Marination.Keep for 1 to 2 hour's.

*Pressure cook the marinated beef till 2 whistles in medium heat or else cook in a pan till the beef is cooked (takes 1 to 1 and 1/2 hour in medium heat , keep stirring in between) 

* In a Chatti / Earthen pot or any pan , heat oil  , add in the crushed ginger , garlic and saute for a few minutes and add half of the sliced onion and cook till golden brown , add the coconut pieces (If using)

* Add powders one by one - Turmeric powder , coriander powder , red chili Powder , Masala Powder , Fenugreek powder (if using) saute for 1 to 2 minutes in low heat and add the cooked beef along with its little stalk. Add salt to taste.

*Stir to combine all the ingredients well to the beef - till the beef gets coated with the masala well. Cook for another 5 minutes in low heat.

* Add the curry leaves and the rest of the sliced red onion , stir once and switch off the heat. 

*Serve hot with Rice/ Kerala Porotta. 


For a less complicated Kerala style Meat masala  powder - Dry roast 

  • Fennel Seeds - 2 table spoon  
  • Pepper corns - 4 to 6 
  • Cinnamon stick 2 small stick
  • Cloves - 3 to 4 no's 
  • Cardamom - 5 to 6 no's .

Powder these ingredients and store in an air tight container.
