For those who doesn't like the taste of Beetroot like me and may others , here is a stir fry recipe , the taste and texture of potatoes neutralizes any beet flavor ,
I know most of you would love the taste of Beetroot , but only me I am not a fan of these

Beetroot is a very nutritious vegetable , its a miracle ingredient which helps lower Blood Pressure as lot of studies proved the same
The high content of "Nitrates" in Beetroot produces a gas called Nitric Oxide in Blood which widens the blood vessels and hence lowers Blood Pressure
Also "Betacyanin" a pigment which gives beets that color is a powerful Antioxidant , which helps to reduces the risk of heart disease and stroke.
& Also its high in Iron content , hence helps to increase Hemoglobin in blood
And so I am forced to buy Beetroots at least once in a week
Ingredients
Beetroot - 2 no's cubed
Potato - 1 cubed
Onion - 1 medium cubed
Vegetable oil - 2 Tb sp
Mustard seeds - 1 tsp(Optional)
Dry Chili's - 2 no's crushed (optional)
Red chili Powder - 2 tsp (or less)
salt to taste
Method
* Heat oil in a pan (Preferably a non stick pan) , pop mustard seeds (if using) and add then dry red chili's , saute for a few seconds , add the cubed onion, potatoes , beets and then salt
* Cook'em for 10 to 15 minutes in medium to low heat stirring occasionally till the potatoes are cooked nicely , do stir in between and sprinkle water as it tends to stick to the bottom.
*Once its cooked add red chili powder , stir nicely once again switch off the heat.
*serve hot with rice
