A quickly fixed snack , with ripe banana's at home , the only way I love to have Banana.
May call it a duplicate Unniyappom - That's a popular Banana based snack in our place , but then its little more complicated. Do try this if you have ripe Banana and Rice flour at home , if not try it with All purpose flour it will taste much better.
Whom ever tasted this snack have loved it too and so I want to insist you guys to try this ;)
Ingredients
Ripe Bananas - 2 medium size
Sugar - 1/2 cup (use brown sugar if you have)
Baking powder - 1/4 tsp (optional)
Rice Flour - 1/2 cup (optional , if not , use 1 cup All purpose flour)
All purpose flour - 1/2 cup
Salt - a pinch
Oil for frying
I used a little flax seed powder too , as usual to get rid of that guilt of having fried snack....
But Guilt is always there :)
Method
* Mash Banana's nicely with your hands or fork
* Mix in all the other ingredients to make a thick batter (not a dough) , if you think its thick add little water to make it a thick batter like consistency.
*Heat oil in frying pan . I don't have a Unniappom pan , but that's fine may use any frying pan , will miss that shape though.
*Spoon in 1 table spoon of batter to the hot oil , fry it till brown and crisp on all sides (keep heat in medium to high and use not more than 1 Table spoon of batter for each fritters, as if more the inside wouldn't get cooked)
* Serve with Tea or coffee
A tasty crispy snack.....on a rainy day like we had yesterday.
