Kozhi Thoran /Chicken Stir fry


Another lackadaisical Sunday , woke up late , had to force other people here to brush their teeth and start up the day , was too lethargic to do anything.
Hubby lovingly told me he's on diet and doesn't need anything for lunch " Oh that's his usual dialogue " and then by 1-30 noon he'll be searching the pantry shelf...since this is a very easy dish and also because I had some chicken in the fridge , decided to make this super easy dish.



Ingredients

Chicken - Boneless 1 cup chopped.
Green chili - 2 no's
Garlic and Ginger - 1 table spoon each
Onion/shallots - 1 large, chopped or 20 small onion's crushed.
Curry leaves - 1 spring
Coconut - 1/4 cup grated
Meat Masala powder - 1 tsp or use Packed Meat Masala powder.
(Meat masala powder - fennel seeds 2 tsp + cinnamon 1small + cloves 3 no's + cardamon 4 no's + blackpepper a few all dry roasted and powdered)
Corinader Powder - 2 tsp
Turmeric Powder - 1 tsp
Red chili Powder - 1 table spoon (use as required)
Vinegar - 2 tsp
Salt to taste
Coconut oil - 2 table spoon.
Coconut - chopped 2 table spoon (Optional)

Method

* Heat coconut oil in a thick bottom pan , saute ginger , garlic and green chili ,folowed by coconut chopped (if using) , saute for 5 minutes and add chopped onion or small onion's crushed and saute till golden brown.





* Add cleaned chicken pieces , salt , curry leaves and mix well , then add in turmeric powder, masala powder and coriander powder , mix and cook till the chicken pieces are all done, takes almost 10 minutes in medium heat , do stir or else it may stick to the bottom of the pan.


* Sprinkle water if needed (if these sticks) Add the grated coconut and red chili powder and combine well.Keep heat in low once the chicken is cooked and do stir constantly.




Serve hot with rice or Chapathi/Indian Bread.
