Chicken is the most preferred meat in our family because of its " Not very harmful " dietary value hence I do lot of experiments with it , which sometimes ends up in myself and soccer man in "No love talks "
But this recipe turned out good.......do give it a try , you will not be disappointed.
Ingredients
Chicken - 1/2 of a full chicken (Since this was just trial) cut to medium size
Mint - 1/4 cup finely chopped
Cilantro/Coriander Leaves - 1/4 cup finely chopped.
Black Pepper - 1 table spoon (whole pepper crushed)
Green Chili's - 2 to 3 no's (use more if required)
Ginger and garlic crushed - 1 table spoon each.
Vinegar or lime juice - 1 table spoon.
Curd - 3 table spoon
Onion - 1 large sliced.
Turmeric Powder - 1/2 tsp
Coriander Powder - 2 table spoon
Meat Masala - 1 tsp (crushed Fennel seeds,cardamom,cloves and cinnamon) or use Packed meat masala powder.
Oil - 1 and 1/2 table spoon (Think coconut oil will taste good)
Salt to taste
Would have used curry leaves if I had :(
Method.
*Marinate the cleaned chicken pieces with vinegar/lime juice,salt , turmeric Powder, Freshly ground Pepper ,mint & coriander leave/cilantro , half table spoon of ginger and garlic paste and curd for at least an hour.
* Pressure cook for just one whistle and switch off the heat (or cook till the chicken is nice and tender)
*Open the lid when its ready and transfer the chicken a thick bottom pan , and keep heat in low , add onion , rest of the crushed ginger and garlic (1/2 table spoon) ,and green chili's , cook for another 15 minutes till the water in the dish evaporates.Do keep stirring in between.
* Make space in the middle and add 1 table spoon oil , wait for the oil to heat up a bit and add the coriander powder and meat masala powder to it and stir constantly add in the curry leaves too if using.
* Mix well keeping the heat to medium - high and keep stirring to quote all the pieces with the gravy , cook for another 5 minutes and switch off the heat.Pour 1/2 table spoon of coconut oil over the roast and serve with what ever you like , goes good with Chapathi/bread or rice.
