Achinga Payar - Kaya Mezhukkupuratti / Long Beans with Raw Banana stir fry


 Another combination I am sure everyone would love to have, its a common dish in some parts of kerala , most people prefer long beans in our place, addition of raw banana's makes it more tasty & nutritious...

 Ingredients

Raw Banana - 1 cubed / or cut length wise
Long Beans/ Achinga Payar - 1 cup cut length wise
Onion/ Shallots - 2 no's sliced
Garlic - 2 no's crushed
Oil - 2 Tb sp (I used Coconut oil)
Turmeric powder - 1/4 tsp
Red chili Powder / or else use chili flakes - 2 tsp
Curry leaves - few leaves (I didn't have)
Salt to taste

(May add sliced coconut pieces too , I didn't use)

Method

* Cut Raw banana's into thin pieces (lengthwise)  , wash and keep to boil with little water & salt.  (boil till the banana pieces are almost cooked)

* Add long beans and sliced coconut (if using) &Turmeric Powder ,  cook till its done , may add some water , stir in between.


* When its all cooked and no water left in the pan , make some space in the middle , add oil , when its heated add garlic first followed by sliced onion, cover with a lid for a few seconds and then
add red chili powder or flakes & curry leaves(if using).
Add salt if necessary and stir to combine everything well.



* Switch off the heat & Serve with Rice.
