Pan -Made Ada


My Hubby's Granny is a huge inspiration for me , not only in the kitchen , I love to listen to her when she shares her life experiences and times of her good old days. 

  
A Quote which came in to my thought  

This Is a recipe, she prepares for snacking , usually  she prepares it with Jackfruit or Plantain , these fruits are the most she gets from her backyard farm, I have seen her desperate to save even the last one's of these fruits leftover.
She prepares a kind of preserve (varatiyathu) with these fruits , during the season time ,she roughly chops these fruits and cooks these with enough amount of Jaggery/Dark Brown sugar till the water from the fruits dries off ,  once cooled she stores these in the fridge and it is with these preserves that  she makes varieties of snacks.

I had brought a little of the  Jack fruit preserve (chakka varatiyathu ) from kerala , stored it in the freezer , today I thought to make this super easy snack with it.

Ingredients 


Jackfruit/ Chakka Varatiyathu - 1/2 cup (you can use Plantain crushed also )  
Sugar - 1/4 cup ( Jaggery/Brown sugar is what Ammamma/ granny uses )
Coconut - 2 table spoon
Rice Flour - 1/4 cup 
All purpose flour - 2 tsp
Cardamon - 2 no's crushed 
Coconut oil - 2 to 3 table spoon's
Salt a Pinch.



Method


* Mix all the ingredients to make loose dough , if the dough looks dry , add little bit of water , the mixture should be loose. 
* In a dosa pan , spread a tsp of oil and rub the pan as we make dosa/pan cake , spread the dough , slowly press the dough with a spoon to flatten it to less than half inch thickness , spread a little of coconut oil through the sides of the dough , cook for 5 to 7 mints on one side and flip,  cook for another 5 -7 mints till the  Ada is cooked and looks crispy on the outside.  ( Covering the pan while cooking the Ada helps ) cooking 'em faster. 
* Remove from heat , cut in to pieces and serve.
