Wheat Nan Khatai


Nan khatai is otherwise called the traditional Indian " Biskoot ".One of the most popularly seen item in our bakeries in India , now I rarely see these  ,the reason for which is not sure may be its the civilization...When I was a kid I loved these , as kids these days loves Donuts or Oreo cookies , hence thought to make these at home.

Studies says that refined products (the bleached all purpose flour)   are not good for health ,reading these article's makes me almost guilty when I use plain flour each time.
By my experience , the texture and taste of the dish with plain flour will not match when its substituted.But then 

I am forced to follow half and half ratio , out of the total flour needed in a recipe ,using just half portion of plain white flour and the other half any other flour with little more fiber content in it , usually its wheat flour in my kitchen , corn flour ,gram flour are all good options too especially when you make something like cookies , this would be a good idea. 

Ingredients 


All purpose flour - 1/4 cup
Wheat flour - 1/2 cup 
Semolina - 2 table spoon 
Salt a pinch 
Ghee  - 1/3 cup ( I used melted unsalted butter ,little less than half cup) 
Sugar - 1/4 cup 
Cardamon - 2 crushed 
Baking powder - 1/2 tsp 


Method 


* Preheat the oven to 300 degree F 
* Sift Plain Flour + wheat flour + salt + baking  powder & combine sugar , semolina and crushed cardamon to it.
* Add ghee or melted butter to the above mixture , mix till well combined. Make small balls with the dough , and pat slightly to flatten it a bit , mark a cross on each (I don't know why , but that's how my mummy made it once )  you could place any dry fruits on top like cashew, pistachio's etc 
* Bake these at 300 degree F for 15 to 20 minutes , till they turn golden brown  , remove from oven , it would look a bit soft and undone , need to transfer these to a wire rack  and allow to cool for 5 - 10 minutes.

Serve with Hot tea or coffee 



Tip : If dough looks dry add a spoon of milk or water , to make it easier to work with , do not add more. 
       : If using salted butter do not use salt in the recipe.
       : Can make only 10 to 12 Nan khatai's with this measurement , if more needed ,double the measurements
